It's the low coolant light.
Mine flashes and dings at me for about one second every once in a while. Happens on cold starts for me. Probably condensation in the sensor/wiring. No leaks or anything. Edit: Might add this happens during acceleration only, thus fitting into Redog's comment.
If you notice leaks or coolant on parts under the hood, prepare for an annoying replacement of the Lower Intake Manifold.

Was the car parked on a hill?
Mine just needed a few drops, The sensor is in the front of the tank, if the car is parked facing up, that could happen.

x2, mine's a tad low, which causes it to trip the sensor during acceleration.

Mine needs refilling every 2-3 months, I've got a bit of a leak I think you could safely say.

Yea mine did that too, i added coolant and it went away. its as easy as that
