Fish and Chips shop, you'd be surprised how much one guy can crank out in one of those. I did the same thing for a while, all in the prep. Then you can crank it out as fast as the friers can churn it out!

The restaurant has 44 seats in the dining room and average order takes 8 minutes to fry and serve.... you place your order at the main counter pay for it then it gets made. If you sit in the dining room I serve you lol.... as Paul said it's all in the prep for the day. I show up at 9 open at 11. The volume is fairly low but I have worked in 150 seat restaurant with 30 people working and in my place I can turn out faster and better quality service which is why I took over. Sure the hours are long and the pay isn't much but it's my place and I only have to answer to myself and to me that's priceless....
