im pretty sure u can just shoot it whereever you want without risk, with the exception of the warm air intake, if you have that obviously put a bag over the filter, otherwise, have a hayday

just leave the car running when you spray it and just mist the engine no direct hard pressure

use a white wall tire cleaner (acid-based)...thats what we use when we detail. like oldsman said just mist it unless theres a bunch of grease in one area. and leave it running.
ps.. simple green is crap and wont do a very good job

I just use the high pressure soap at the car wash, keep away from the obvious - Hot manifolds and spark plug wires. when I had old cars I would keep it running and always have some wd40 incase it won't start. Now I have a newer one and I know how to keep it in good shape, I don't let it run any more.

Yeah I leave mine off when cleaning, don't see the point in running it during spraying besides faster drying time.

If you want a good finishing product, hyper dressing from meguiars is awesome, you buy it and then dilute it in a spray bottle, leaves a nice natural shine all the way up through a wet stain depending on how much you dilute it, thats what i use whenever i do mine. Go Meguiars!
Peace
