Driving on the highway my WB A/F gauge reads lean, but I think it needs a new sensor for the WB.
Driving down the highway the engine was chugging and the RPMs were bouncing between 2250 and 1750 real quick. vroom vroom vroom vroom vroom and when I slapped the gas pedal it stopped. Happened a few times.
This didn't seem to happen before the intake spacers were installed. Could that be causing the issue? The gauge was showing a lean condition before installing the spacers

Don't think the spacers themselves are at fault, but maybe a slight vacuum leak somewhere, TPS, MAF tuning, could be a lot of things. Does it feel like it's going back and forth between 3rd and 4th gear? Try shifting into 3rd when it does it, see if it runs steady in 3rd.

i bet its transmission. my car did the same exact thing, after the 6 speed it was gone.
mine did that crap too then the tranny took a shit
think it turned out to be the torque converter lock up solenoid

No it's not shifting wrong.
I'm thinking possible vacuum leak. I looked at the old intake gaskets and one of the pegs is missing and the hole is torn. The spacer wouldn't be able to seal correctly with that peg there

well it could be a little of that. but its probably something with the transmission as well, mine did that rpm bounce alot then after i got rid of the auto for the 6speed it has not happened since.
